This soft cheese with a bloomy rind, with a smell of mushrooms and fresh cream, comes from the addition of cream (double cream) with a taste of crème fraîche and a finish of salted butter. The name, Pont tournant, and the photo come from Noyan. The Richelieu River, an effluent of Lake Champlain, whose swing bridge of the Canadian National Railway allows boaters to pass freely between the Richelieu and Lake Champlain.
