A native of Switzerland, Fritz Kaiser brought the secret of making raclette cheese with him to Quebec. The Kaiser cheese dairy produces a range of raclette-style cheeses including the classic Kaiser Raclette, peppercorn raclette, Chili and Griffon raclette, whose rind is washed with Griffon beer.
