Semi-firm cheese with a washed and brushed rind, matured in a drying room for more than nine weeks. It is separated in its center by an edible vegetable ash, which represents well the crossing from Quebec to the United States a stone’s throw from the cheese factory. With earthy aromas and vegetable flavor, the Douanier has a marked presence in the mouth of nuts and green apples.
