Cheese made from cow’s milk, with a soft paste and a mixed rind. While still young, it is thin and whitish on a slightly coppery background. It gives off smells of earthy mushrooms and truffles, a subtle taste of hazelnut butter. Its paste is melting to runny, with a very tender heart.
