Fromagerie Le Fromage au VillageLe Diable aux vaches is a semi-soft, washed-rind cheese made of thermised milk from the dairy herd. It is made up of mixed Quebec and Swiss cows. Ripening for 40 days on the surface with brine, the reddish crust of this cheese is covered with a white and damp down. Dotted with small openings, its ivory paste is smooth, creamy and unctuous. The cheese reveals a farm and herbaceous aroma, and its taste, also herbaceous, has notes of fresh farm milk, long and pleasant in the mouth.
