Stracciatella
Bella CasaraStracciatella is a fresh cow's cheese, a traditional specialty of Puglia in southern Italy. Whole fresh cream and cheese threads. It is neither more nor less than the creamy part of the burrata, the most greedy. To taste with your eyes closed, plain or with a drizzle of olive oil, a twist of ground black pepper, on a nice slice of toasted country bread.
