This Holstein cow’s milk cheddar is handcrafted in rural Prince Edward Island. It is made from raw milk that is gently heated, unpasteurized to allow the beneficial bacteria to thrive and give it depth and character. The cloth wrapping allows it to breathe and develop its rich, robust flavor as it ages.
