Grand Trunk

Made from unpasteurized cow's milk, this cheese is inspired by the production of European alpine cheeses. What appears to be a crumbling cheese is rather creamy and velvety with a slightly salty finish. The crust gives an aromatic note that contrasts with the dough and complements it pleasantly. The flavor of Grand Trunk is reminiscent of nuts, almonds and salted butter.

At the end of the 19th century, the Grand Trunk Railway of Canada or GTR, also known informally in French as the Grand Trunk of Canada, was the main railway line linking Toronto to Montreal. At Pointe St Charles, a former industrial district of Montreal, there is a street that bears the name of this former company railway.
